At the Artisan Bread School, we seek to equip bakers of all experience levels with the tools that they need in order to create delicious artisan breads.   We will focus on mastering the fundamentals as well as discussing advanced techniques as we practice making artisan breads. With our own stone mill and wood ovens we cover all of the topics of making breads in an artisan way.  We at the Artisan Bread School recognize that people will have different interest levels and equipment so we also cover how to get great results in the modern home as well. Our world renowned Artisan Bread School coach, Tom Edwards, will lead you through numerous recipes and techniques.  Tom is passionate about sharing his knowledge and helping you become a baker to your desired level, be it someone who bakes for their family and neighborhood or building a business around farmers markets and community supported bread shares.

Artisan Sourdough Demonstration

This Artisan Bread School demonstration class will focus on giving beginner bakers an introduction to making bread with natural leaven. You will learn about the benefits of making bread with natural leaven and will walk through the creation of a sourdough bread with the head of the Artisan Bread School, artisan baker Tom Edwards. You will leave with a freshly baked loaf of sourdough bread and MozzaPi will provide you with a family style of dinner of assorted sourdough Neapolitan pizzas. This class is limited to 10 students and the cost of this 2-hour class is $70 per person.

Intro to

Sourdough Class

This Artisan Bread School class is for the individual who wants to get hands-on knowledge regarding baking with natural leaven. We will begin our class by focusing on creating and maintaining your own sourdough starter. Then, we will create a sourdough country loaf that you will mix, knead and shape by hand. This Artisan Bread School class will specifically focus on different flours, proper baking techniques, and hand kneading skills. We will bake all of our breads in the wood oven as well as give instructions for baking in a conventional oven. You will take home the two loafs of sourdough bread you make in class to bake the next day, as well as loafs baked during class. Please be aware that you will need one of the following to bake these artisan bread loaves: an 8-in loaf pan, a dutch oven, or a cast iron skillet. We will have several harder to find baking items available for sale at the class, if you are interested in purchasing them. We will end our class with a family style dinner of assorted sourdough Neapolitan pizzas, made in our MozzaPi oven. This class is limited to 8 students and the cost of this 5-hour class is $150 per person. Invoices will be sent upon confirmation of class registration.

Artisan Bread School Youth Class

Youth Intro to

Sourdough Class

Similar to our adult version of this class, the Youth Intro to Sourdough is for students age 10-18 who wants to get hands-on knowledge regarding baking with natural leaven. You will begin our class by focusing on creating and maintaining your own sourdough starter. Then, we will create a sourdough country loaf that you will mix, knead and shape by hand. MozzaPi

Pizza Making Class

While an expertly crafted pizza is a joy to behold and even better to sink your teeth into, making a great pizza actually requires some skill and knowledge.  In this four-hour class, we will walk you through crafting your own artisan pizzas at home. We will start by discussing different styles of pizza dough and then get hands-on by making a classic yeasted pizza dough.We will cover the basics of hand kneading and the benefits long fermentation time. We will discuss the creation of a proper cornice (crust) in a handmade dough, and will practice properly forming and topping pizzas. Although you will be cooking your pizza in our MozzaPi wood fired oven, we will cover cooking methogs including home ovens, pizza stones, green eggs and outdoor gas pizza ovens. After enjoying a few wood fired pizzas for dinner, we will debrief and send you home with lots of memories, photos and the dough you prepared in class so that you can practice and enjoy your pizza once again. This class is limited to 8 students and the cost of this 4-hour class is $150 per person.
